2 cups self-rising flour

2 teaspoons baking powder

2 tablespoons suguar

1 teaspoon of baking soda

2 eggs, beaten

4 tablespoons canola oil

2 teaspoons maple flavoring

2-1/2 cups buttermilk

1 (8 oz.) can crushed pineapple, well drained

1/3 cup pecan chips 

Combine flour, baking powder, sugar, and baking soda, mixing dry ingredients together.

Add eggs, canola oil, maple flavoring, and buttermilk. Using mixer, beat on high speed, until batter is smooth.

Add pineapple and pecan chips. Using a spoon, stir until blended.

Pour desired amount of pancake batter onto hot, lightly-greased griddle. When batter begins to bubble, turn pancake only once.

Serve with maple syrup.
