Vegetable spray

4 cups water

1/4 teaspoon salt

4 (10 oz.) packages matchstix carrots

1 teaspoon cinnamon

2 tablespoons light brown sugar

1 stick butter

2 (10 oz.) jars peach all fruit, spreadable fruit

1 teaspoon rum flavoring

2 eggs, beaten

1/4 cup heavy whipping cream

1-1/2 cups miniature marshmallows

Spray 2-quart round glass baking dish with vegetable spray.

In a boiler, bring water and salt to a boil.

Add carrots to boiling water and cook until very tender. Remove from stove and drain very well. (Remove all water)

In a large bowl, mash carrots until smooth. (Drain again)

In a large bowl, combine carrots, cinnamon, sugar and butter. With mixer, beat until blended.

Add fruit, rum flavoring, eggs, and whipping cream. Beat until mixture is smooth.

Pour into baking dish, bake 45 minutes or until set. Remove from oven.

Top with miniature marshmallows and bake for a few minutes or until marshmallows start to melt and begin to brown. (Do not overcook.)
